Ingredients
- 160 g ground turkey fried and drained
- 90 g quinoa
- 60 g asparagus blanched and cut into 1" pieces
- 40 g red pepper roasted
- 35 g red onion fine dice and fried
- 90 g sour cream dressing season with dijon mustard and ginger
- 20 g almonds chopped and toasted
- 5 g parsley fine chop
Instructions
- Fry turkey - season with salt and a pinch of red pepper flakes - drain.
- Add chopped almonds and toast on low heat until lightly brown and crunchy
- Add 1 tbsp dijon mustard and 1/4 tsp ground ginger to 3 oz sour cream dressing and mix - taste for salt. Serve in 4oz cup
- Plate turkey and dressing cup. Add bed of quinoa and place remaining ingredients on top. Garnish with parsley.
