Almond Turkey Salad with Asparagus and Quinoa Bowl

Ingredients

  • 160 g ground turkey fried and drained
  • 90 g quinoa
  • 60 g asparagus blanched and cut into 1" pieces
  • 40 g red pepper roasted
  • 35 g red onion fine dice and fried
  • 90 g sour cream dressing season with dijon mustard and ginger
  • 20 g almonds chopped and toasted
  • 5 g parsley fine chop

Instructions

  • Fry turkey - season with salt and a pinch of red pepper flakes - drain.
  • Add chopped almonds and toast on low heat until lightly brown and crunchy
  • Add 1 tbsp dijon mustard and 1/4 tsp ground ginger to 3 oz sour cream dressing and mix - taste for salt. Serve in 4oz cup
  • Plate turkey and dressing cup. Add bed of quinoa and place remaining ingredients on top. Garnish with parsley.
