Walnut and Lentil "Chorizo"

Equipment

Ingredients

  • 3 cup walnuts
  • 3 cup green lentils cooked and cooled
  • 4 tbsp olive oil
  • 2 tbsp chili powder
  • 2 tbsp paprika
  • 1 tbsp cumin
  • 1/4 cup tamari
  • 1/4 cup lime juice
  • 2 tbsp Maple Syrup
  • 1.5 tsp chipotle adobo
  • 1 tbsp salt

Instructions

  • Measure all ingredients
  • In a food processor, pulse the walnuts until they are coarse and crumbly. Set aside
  • Heat the olive oil in a large pan. Add the cooked lentils and walnuts, and saute for 5 minutes
  • Add the chili powder, paprika and cumin. Saute for a few minutes, stirring, to cook the spices
  • Add the tamari, maple syrup, lime juice, chipotle adobo and salt. Continue to saute until the liquid has evaporated and the mixture becomes dry and crisp
  • Taste and adjust seasoning
  • Store in an airtight container up to 1 week, or in the freezer up to 1 month
