Avocado Alfredo Sauce

Avocado Alfredo Sauce

Equipment

  • High speed blender

Ingredients

  • 1 tbsp dried basil
  • 4 ripe avocados
  • 4 tbsp garlic
  • 1/2 cup lemon juice
  • 1/4 cup water
  • 1/4 cup olive oil
  • 4 tsp salt
  • 1/4 cup nutritional yeast
  • 2 tbsp lemon zest

Instructions

  • Measure out each ingredient
  • In a high speed blender, combine the avocado, basil leaves, garlic, lemon juice, water, nutritional yeast, salt and lemon zest. Blend until it is very smooth, adding a bit more water if needed
  • With the blender running, stream in the olive oil until it is smooth and emulsified.
  • Taste and adjust seasoning
  • Store in an airtight container up to 3 days, or in the freezer up to 1 month

Notes

The sauce will lose it's bright green colour as it sits in the fridge. To prevent this, pour a thin layer of olive oil over the sauce to prevent oxidation.
