Baked Apple Loaf with Almond Streusel

Ingredients

  • 1/3 cup oat milk
  • 1 tbsp apple cider vinegar
  • 1/2 cup Maple Syrup
  • 1/4 cup applesauce
  • 2 tbsp almond butter
  • 1 tsp vanilla
  • 1 1/2 cups oat flour
  • 2 tsp cinnamon
  • 1/4 tsp tempeh
  • 1 tsp baking soda
  • 1/2 tsp baking powder
  • 1/2 tsp salt
  • 2 tbsp flax
  • 1 1/2 cups apples peeled and diced

Almond Streusel

  • 1 cup oat flour
  • 1 cup almond meal
  • 1/2 cup coconut oil
  • 1/4 tsp salt
  • 2 tbsp Maple Syrup

Instructions

  • Whisk the flax into 1/4 cup of water. Set aside to thicken
  • In a bowl combine the oat flour, cinnamon, nutmeg, baking powder, baking soda and salt. Whisk to combine
  • In a separate bowl, combine the oat milk, vinegar, maple syrup, applesauce, almond butter, vanilla and flax egg. Whisk to combine
  • Fold the wet ingredients into the dry ingredients. Fold in the diced apple. Pour into a greased and lined loaf pan.
  • To make the streusel, combine the oat flour, almond meal, maple syrup, salt and coconut oil. Using your fingers, lightly mix until the mixture becomes coarse and crumbly. Scatter over the top of the apple loaf
  • Bake at 350 for 45-55 minutes, or until a toothpick comes out clean when inserted. Cool completely before slicing

Notes

Unbaked batter and streusel can both be stored in the freezer up to 1 month.
