Banana Oat Loaf

Ingredients

  • 3 1/3 cup banana mashed
  • 3/4 cup coconut oil melted
  • 3/4 cup coconut sugar
  • 3/4 cup Maple Syrup
  • 6 tbsp flax
  • 1 cup water
  • 1 1/2 cup plant milk
  • 1 tbsp vanilla extract
  • 5 1/4 cup gf oat flour
  • 3 3/4 cup gf oats
  • 4 1/2 tsp baking powder
  • 1 tbsp baking soda
  • 1 tbsp salt
  • 2 tbsp cinnamon
  • 2 1/4 cup walnuts

Instructions

  • Preheat the oven to 350. Grease and line 3 8-inch loaf pans with parchment.
  • Combine the flax and 1 cup of water to create a flax egg. Allow to thicken, about 10 minutes.
  • In the jug of a high-speed blender, combine the mashed banana, coconut oil, coconut sugar, maple syrup, milk, vanilla and flax egg. Blend until smooth.
  • In a large bowl, combine the oat flour, oats, baking soda, baking powder, salt and cinnamon. Whisk to combine.
  • Add the wet ingredients to the dry and stir until just mixed. Fold in the walnuts.
  • Divide the batter between the loaf pans. Top with additional walnuts. Bake for 35-40 minutes, or until a toothpick comes out clean when inserted. Allow to cool completely before slicing.

Notes

The batter can be kept frozen for up to 2 months.
 
You can also make miniature loaves. Bake for about 18-20 minutes.
