Breakfast Seed Bars

Equipment

Ingredients

  • 1/4 cup water
  • 1/4 cup almond butter
  • 3/4 cup olive oil
  • 1 cup Maple Syrup
  • 1 cup oat milk
  • 2 cup gluten-free oat flour
  • 2 1/4 cup gluten-free oats
  • 1 3/4 cup pumpkin seed
  • 1/2 cup shredded coconut
  • 1/4 cup hemp seeds
  • 1 3/4 cup dark chocolate chunks
  • 1/2 cup dried cranberries
  • 1/2 cup sunflower seeds
  • 1 tbsp cinnamon
  • 2 1/2 tsp salt

Instructions

  • Preheat the oven to 350
  • Grease and line a hotel pan with parchment
  • In a bowl, combine the water, maple syrup, almond butter, olive oil and oat milk and whisk to combine
  • In a separate bowl, combine the dry ingredients
  • Add the wet ingredients to the dry and mix well to combine
  • Pour into the prepared hotel pan and smooth the top
  • Bake for 30-35 minutes, or until set
  • Cool completely before slicing. It's best to cool overnight if possible.
  • Store in an airtight container or bag up to 5 days, or in the freezer up to 1 month

Notes

Bars are easiest to slice when they are fridge cold.
