Sweet Potato and Chickpea Hash

Ingredients

  • 3 tbsp olive oil
  • 1/2 cup white onion diced
  • 1/2 cup celery diced
  • 2 cups sweet potato diced
  • 1/2 cup carrot shredded
  • 1 cup sprouted chickpeas
  • 1 cup black kale sliced
  • 1 tbsp smoked paprika
  • 2 tsp salt
  • 1/2 tsp black pepper
  • 2 tbsp nutritional yeast

Instructions

  • Heat the oil in a large pan
  • Add the diced onion and saute 5 minutes, or until slightly softened
  • Add the celery, sweet potato and chickpeas. Cook over medium heat until the sweet potato is soft and the onion and celery are translucent
  • Fold in the shredded carrot and kale, and cook until the kale is just wilted
  • Add the salt, pepper, paprika and nutritional yeast. Taste and adjust seasoning
  • Serve with cashew sour cream
