Butternut Squash Soup

Ingredients

  • 4 butternut squash peeled and diced
  • 3 onion thinly sliced
  • 3 tbsp minced garlic
  • 2 tbsp onion powder
  • 4 oz juiced ginger
  • 6 carrot peeled, diced
  • 1 tsp cinnamon
  • 1 tbsp curry powder
  • 10 cups water
  • 2 litre coconut milk
  • 6 tbsp himalayan salt
  • 1/4 cup olive oil

Instructions

  • Heat in large pot olive oil over medium heat (5) add onion, minced garlic and saute till slightly soft - 5 mins.
  • Add spices and stir until fragrant - 5 mins
  • Add vegetable stock, tomatoes. coconut milk and ginger - bring to a simmer over medium low heat
  • Add diced squash and carrots.
  • Cover and simmer (3) until squash is tender. Add salt.
  • Allow to cook, then blend. Taste and adjust seasoning
  • Store in airtight container - up to five days - or freeze up to two months
