Protein Breakfast Cookies

Ingredients

  • 550 g bananas mashed
  • 80 g oat flour
  • 80 g oats
  • 92 g organic protein powder
  • 100 g coconut oil
  • 90 g almond butter
  • 2 g salt
  • 2 g baking soda
  • 2 tbsp flax
  • 80 g dried cranberries
  • 80 g chocolate chunks

Instructions

  • Combine the flax with 6 tablespoons of water. Set aside to thicken.
  • Combine the oat flour, oats, nutritional yeast, salt and baking soda. Set aside.
  • Combine the mashed banana, flax egg, vanilla, coconut oil and almond butter and whisk well to combine.
  • Add the wet ingredients to the dry and mix until just combined. Fold in the dried cranberries and chocolate chunks.
  • Portion the cookies into 2 tablespoon drops. Bake for 20 minutes at 350, or freeze the unbaked cookies until ready to use.
