Vegan Banana Chocolate Chip Muffins

Equipment

Ingredients

  • 2 5/8 cup Rice Flour
  • 1 cup Almond Flour
  • 3 tsp baking powder
  • 3/4 tsp baking soda
  • 3/8 tsp vanilla
  • 1/4 cup Maple Syrup
  • 6 bananas
  • 1 cup walnuts
  • 2 tbsp flax
  • 1 tsp cinnamon
  • 1/2 cup applesauce
  • 3/8 tsp salt
  • 3/4 cup extra virgin olive oil

Instructions

  • Preheat oven to 325 degrees fahrenheit
  • Combine dry ingredients (flours, baking powder, baking soda, cinnamon, salt, flax, walnuts) in a bowl and set aside.
  • Mix wet ingredients (vanilla, oil, applesauce, maple syrup) in a separate bowl.
  • Mash bananas.
  • Combine all of the above.
  • Add chocolate chips and mix.
  • Grease the tin or line with paper, fill each muffin cup 2/3 - 3/4 full.
  • Place in the oven on the top rack for 22 minutes.
  • Remove from oven and let cool. Store in an airtight container once cooled.
